The pancake has transcended cultures, nations and generations emerging as a hot favorite. Known as flapjacks in America and crepes in France, a pancake is served in different places at different times of the day. For some it is a breakfast item while others like it as a snack. A pancake typically resembles a flat cake and it is made on a griddle or pan from soft batter. Pancakes can be served plain and also with a variety of toppings or fillings. Jam, fruit, syrup and even meat is used for fillings.

An authentic pancake recipe would include eggs, milk and sugar all combined to make a smooth free flowing batter. Pancakes can either be cooked on a greased girdle or fried in a shallow pan. In Europe you even have a day dedicated to pancakes known as Pancake Day. Over the years the name has given way to Mardi gras or Shroves day which is the day before lent.

To add some variety to your usual pancake recipe try out some interesting combination like basting with honey, maple syrup etc. Here we can see a very interesting banana recipe unfold. Get 1 cup flour and a tablespoon of sugar, 1/2 a teaspoon of salt and 2 teaspoons of baking powder. 1 egg and a cup of milk is necessary not forget 2 tablespoons of oil. Last but not the least you need a ripe banana which has to be mashed until soft.

For convenience in mixing, find a large deep bowl and also a wire whisk to carry out the process efficiently. As a first step, put in all the dry ingredients and mix with the wire whisk. Take a smaller bowl and combine eggs, milk and oil with an electric mixer. Then you need to add these wet ingredients to the dry mixture kept aside. Put in the mashed banana too at this point. Hand mix only until all large lumps are gone.

Heat a griddle or a frying pan. Make you sure grease the pan lightly. Pour in the batter in a 1/4th cup measure and leave to cook for a while. After a while you'll see bubbles appear on the surface and the pancake edges turn brown. Don't forget to flip the pancake and cook the other side for a minute.

To enhance the taste a bit you could toss in a pinch of cinnamon powder as well.

I have a vegetarian friend who has been advised not to eat dairy products whilst on the anti candida diet, which means a temporary vegan. She has found it hard at times, because the strictest versions of the diet say to avoid pulses and nuts because of the spores that might be found on them after they have been stored for a while. She has subsequently heard that you should be ok with nuts as long as you either microwave them or roast them, but the jury is still out on pulses, so she avoids them.

Her typical menu would be a green salad for breakfast (sometimes with avocado, which she loves and regard as a real treat!), a soup for lunch which includes both vegetables and protein (for example celery and cashew soup, carrot and almond soup), and a meal in the evening like stir fried veggies and 50g of brown rice - so she can look forward to her daily carb allowance!

When she started the diet, she thought that she'd feel hungry all the time. It seemed so much less than she usually ate, but actually it is fine most of the time. When she gets occasional cravings, she either eats a few nuts or a piece of 'safe' homemade flapjack. She keeps a supply tucked in the freezer - her recipe is a mixture of oats, fruit sugar, and vegan margarine - with some nuts thrown in.

She also finds that planning her next few meals, so she doesn't have to stare at the contents of the fridge and try and get enthusiastic about what she's restricted to when she is about to start cooking. It also means that she can focus on the right ingredients when she is shopping.

Good luck with the diet, and remember, if you recognize that the body can be addicted to sugar and carbohydrates, then you can understand why you get cravings, and find it easier to remember that you can manage without them, even if it seems desperately hard for the first few days!
